Coconut, Pineapple and Mint Smoothie

This is a great supplement to a meal, or can be a quick meal replacement if you need it. This shake is easy to make and ALWAYS comes out great. Interchange fresh or frozen ingredients to your liking.

  • Can of coconut milk (full fat or reduced, depending on how creamy you want your smoothie)
  • Cup of frozen kale (frozen is always easier to use than fresh)
  • Cucumber (half of the usual size, or 1-2 mini cucumbers)
  • Cup of pineapple (fresh or frozen)
  • Fresh mint (as much as you want!)
  • Fresh lemon
  • Pinch of sea salt
  • Water to fill

*Blendtec, Vitamix, and Ninja’s all blend full shakes very well, liquefying the pulp. We recommend investing in one of these blenders if you like fiber-filled smoothies!
