A fresh summer recipe to mix into your rotation. This tasty salad is a blend of a salsa and a guacamole. Pair it with any grilled favorites!
-1 cup of Corn
-1 cup of Black Beans
-1 cup of chopped Tomatoes
-1/2 small Red Onion
-1/2 cup of Cilantro
-1 TBSP of olive oil
-1 fresh juiced lime
-Sea Salt to taste
-Dash of Cayenne Pepper
-You can use leftover corn on the cob or simply steam a bag of frozen organic corn here. If you are cooking it fresh allow it cool before adding to the bowl.
-Rinse a can of black beans well, then add to the bowl.
-Finely chop and add the onion, jalapeno, cilantro, and tomatoes.
-Slice up your avocados into chunks and add to the bowl.
-Add all of your oil and seasonings and stir well. Taste and adjust to your liking.
-Chill in the fridge for 15 minutes to allow it to settle, then serve and enjoy!
