Quick Hit Recipe: Bacon Sweet Potato Hash

Bacon will make it better! This is a delicious and tasty combo that can be a meal on its own or a perfect side dish. Plus it’s easy to prep and clean—do it all in the same pan!

 

-Cook package of bacon in large skillet

-Chop one sweet onion, two sweet potatoes, and about 3 cloves of garlic

-Prep bag of chopped Brussels sprouts and/or chopped greens (kale/chard)

-After bacon is finished, remove and dry on a paper towel

-Add sweet potatoes, onion, and garlic to the same pan; sauté in the bacon grease

-After 2-3 minutes of softening, spread vegetables across the pan as best you can. Then cover the vegetables in the chopped Brussels (and greens, if you’re using them). This will help create steam and make sure everything softens enough.

-After 2-3 minutes, mix everything together and let it continue to cook

-Crumble the bacon and dump it into the pan

-Remove from heat, let cool, and enjoy!

 

*I like to wait until the sweet potatoes are soft, but not mushy. That’s when I add the bacon and remove from heat.

*Depending on the bacon you use (try to use nitrate free), there will be a varying amount of fat to cook in. You can add or remove to your liking. I typically will add ingredients and cook more if I have excess fat to cook in. I like having leftovers!
