Coconut Cilantro Cauliflower Rice and Chimichurri Sauce

Cauliflower rice is a great way to sneak in extra vegetables. It is easy to prepare, tastes fresh, and can pair with just about any protein. A nice grilled steak, Spicy Cilantro Cauliflower rice, and a tasty homemade Chimichurri sauce will hit the spot…

 

Spicy Cilantro Cauliflower Rice

-Chop 1 tbs of fresh cilantro

-Heat 2 tbs of coconut oil in a large skillet at medium-high heat

-Add in one package of riced cauliflower and sauté for five minutes

-Add in ¼ cup of coconut milk, fresh limejuice, and a tsp of honey and cook for another 10 minutes (you can taste the rice to see how crunchy you want it)

-Add in cilantro and sea salt at the end

Chimichurri Sauce

Chop and set aside:

-3-4 cloves of garlic

-¼ cup each of fresh cilantro and parsley

-1 jalapeno

-1 shallot

Next combine the following in a small bowl and let sit for a few minutes:

-1/2 cup of red wine vinegar

-1 tsp of salt

-the garlic, shallot, and jalapeno

Use a blender to blend, scoop out into a small bowl, then add:

-1/2 cup of olive oil

-fresh herbs

-sea salt to taste

Stir well then chill for a few hours (if you can) and enjoy!
