Crunchy, creamy, and delicious! A perfectly ripe avocado can turn just about any salad into a hit. Here we chop up some celery, apple, scallion, and parsley with a simple dressing. Give it a go!
Rinse and Chop:
-2-3 celery stalks
-One scallion (green onion)
-One cup of fresh parsley
Add to a medium sized bowl and give it a light stir.
Open and slice the avocado into small chunks, add to the bowl.
In a small bowl, prepare the dressing:
-2 TBSP of olive oil
-1 TBSP of apple cider vinegar
-Half of a fresh squeezed lemon
-1 tsp of sea salt
-1/2 tsp of ground mustard
Stir together well, then add to the salad bowl. Mix it up and enjoy!
