Grilled Chicken, Beet, and Pear Salad

Aim to get in a salad every day!  Here’s another simple and delicious combination to mix up your salad routine at home.  Grilled chicken paired with steamed  beets and pear and a balsamic dressing…give it a go!

Grilled Chicken

-Quick chicken marinade:  Olive or avocado oil rub, sea salt, pepper, lemon, cayenne pepper (optional)

-Prepare skillet on stove top at medium-high heat with 2-3 TBSP of avocado oil.  Sear chicken on both sides (until slightly browned), then transfer pan to the oven for 5-7 minutes to finish.  If you don’t have a oven transfer skillet, just put the chicken pieces onto a baking sheet to finish.

-If you have access to a grill, simply preheat to medium-high and grill for 4-5 minutes on each side.

Beets

-These are a great pre-packaged item available in most stores now.  They are already peeled and steamed for you.  If you want to go fully fresh, simply boil some water in a pot and place the peeled and chopped beets in a steamer net until soft.

Chop

-Rinse and chop the green onion, cucumber, pear, and beets then add to a large bowl

-After chicken is done, chop into pieces and add as much as you want to the bowl (hopefully you made extra for leftovers!)

Dressing

-2-3 TBSP olive oil, 1-2 TBSP balsamic vinegar, 1/2 of fresh squeezed lemon juice, sea salt

Stir and serve!
