Grilled Chicken Chopped Salad

Grilled chicken salads are a staple of any healthy diet. Avoid boredom by switching up your recipes every once in a while. Here’s a balanced, delicious recipe to work into your repertoire…

-Marinate 2-3 large chicken breasts in avocado oil, fresh lemon juice, sea salt, and pepper

-Preheat grill to 425 then grill chicken breasts until cooked medium (4-5 minutes each side)

Chop:

-1 head of romaine lettuce

-1 large handful of spinach

-½ cup of fresh cilantro

-1 red pepper

-1 yellow pepper

-1 green onion

-1 avocado

-½ cup of black olives

Dressing:

-4 TBSP of olive oil

-2 TBSP of apple cider vinegar

-1 tsp of sea salt

-1 fresh lemon squeezed

Chop the chicken then combine with the salad and dressing for a great meal. Feel free to experiment or add some of your favorite ingredients!
