Grilled Peach and Arugula Salad

A simple and wonderful summer salad.  Hit the farmers market for some fresh peaches, whip up a simple balsamic dressing, then add on some toasted walnuts and goat cheese for balance and flavor.


-Preheat Grill to 425 degrees

Prep Dressing by mixing in small bowl:

-1/3 cup of olive oil

-2 tbsp of balsamic vinegar

-1 tbsp of finely chopped shallot

-1 tsp of sea salt


-Lay out arugula in large bowl and mix in the dressing

-Crumble some goat cheese on top of the dressed greens.

-Chop 2 peaches around the pit into slices, place into small bowl, and drizzle with olive oil.  Mix them around to cover.

-Prep some chopped walnuts onto a piece of aluminum foil, drizzle with olive oil, and mix until covered.

-Place the peaches directly on the grill. Place the foil with walnuts on the grill. Flip the peaches after 2-3 minutes. Keep an eye on the walnuts as they will toast after just a few minutes.

-Place the toasted walnuts and peaches on top of the salad and enjoy!
