Roasted Sweet Potato Fries

A fun and tasty side dish that everyone should have in their arsenal.  Only takes a little olive oil and simple seasoning to produce this can’t miss favorite.  Here’s the recipe to roll with!

Before You Get Started….

-Slice the potatoes as evenly as you can.  You don’t want some getting burnt and others still soft.

-Use Parchment Paper, as it will be easiest to flip the fries half way through.

-If you want crispy, slice them thin.  If you want soft, cut large chunks.

-Plan on roughly one sweet potato per person

-Don’t roast them too close together!  Leave enough space between the fries and use a second tray if you have to.

Directions

-Preheat Oven to 400, then slice your sweet potatoes into fry shaped pieces.

-Place the fries into a large mixing bowl or large plastic bag.  Cover the potatoes evenly with a few TBSP of olive oil.  

-Prepare a spice mix of sea salt, pepper, and cumin.  If you want spicy, go with salt, pepper, and paprika/cayenne.  You’ll want enough of spice mix to lightly cover all the fries.  Add it to the bowl (or bag) and mix around.  Save a little bit of the spice mixture to sprinkle on after you layer the baking tray.

-Spread evenly on one or two baking trays lined with parchment paper.  Lightly sprinkle the remaining seasoning.

-Place in oven and carefully turn after 15-20 minutes.  Wait for the bottoms to start to show crisp.

-Roast for another 15-20 minutes, checking towards the end for desired crisp.
