Simple Veggie Combos

We all know how hard it is to get in eight servings of fruits and vegetables a day. It’s near impossible. Don’t overlook simple and tasty combinations that can compliment any meal or serve as a quick and healthy snack. Grab an easy “plus three” in the veggie column with the right mindset.

Most of the time, it’s the easiest recipe’s that taste the best. Just some fresh ingredients and simple preparation is all most of us want. Long-winded recipes that take tons of prep time are fun once in a while, but most of us need quick and versatile options to fill out our day-to-day menus. When we aren’t prepared, processed options high in sugar and chemicals, are always waiting for us.

Fight off the temptations by having a plan. First off, buy more real food then you do processed food. Whatever is available, we are going to eat. Second, practice making simple and tasty real food options. Pick two or three vegetables and fruits that go together and chop them up. Use some fresh squeezed lemon or lime, sea salt, and a little olive oil. Throw a splash of your favorite vinegar if you feel like it. You can’t mess this up.

The more you fill up on real food, the less you will on processed food. You can still enjoy some crackers and chips, but the odds of downing the whole bag will decrease significantly. Also by filling up on vegetables at dinner, you’ll be less likely to pig out on dessert later.

Here’s a few examples that can be prepared in less than five minutes:

  • Shredded Green Cabbage, Green Apple, Sweet Onion
  • Cucumber, Celery, Marinated Olives
  • Apple, Cucumber, Pickled Beets
  • Avocado, Scallion, Mixed Greens

You probably get the picture. Get creative with some of your personal favorites without judging yourself. It will be a great addition to your evolving food preparation practice. Good luck!
