Cauliflower Rice with Zucchini/Tomato/Broccoli Rabe

Cauliflower rice is such an easy way to grab an extra serving of vegetables.  It cooks in just a few minutes, blends with other veggies, and pairs with any protein you are cooking.  Give this recipe a try!

Rinse and Chop:

-One medium zucchini (finely chopped)

-A handful of grape tomatoes or one medium tomato of your choice

-About a cup of chopped broccoli rabe

-One scallion (green onion)

-Peel 2-3 cloves of garlic and finely chop

 

-Set aside one bag of pre-chopped cauliflower rice

 

Heat a larger skillet to medium-high, adding 3TBSP of Avocado oil (good for higher heat cooking).

-Add garlic and scallion first, stirring until lightly browned

-Add zucchini, tomatoes, and broccoli rabe next and stir until the zucchini is softened

-Last add the cauliflower rice.  You will need to add more avocado oil to ensure a smooth saute.  Give it a good stir.

-Add 1 tsp of pepper and 2 tsp of sea salt, stirring every few seconds to ensure even cooking and flavor distribution.

 

Cook to your desired tenderness, a few minutes after adding the rice the dish will be ready.  Cook longer for a softer combination, or pull after 3-4 minutes for a firmer “rice”.

Remove and enjoy!  This pairs great with all proteins and is great to hold as a leftover dish the next day.  Feel free to personalize with any vegetable substitutions or additions you’d like!
