By January 7, 2018 No Comments

Day to day recipe’s can be simple and delicious.  This one is balanced with proteins, fats, and whole grain carbs.  Spice it up any way you want and make leftovers!

Brown Rice / Ground Beef / Diced Green Onion / Tomato / Avocado / Cilantro

-Boil two cups of water, add one cup of rinsed brown rice.  Bring to boil, lower the heat then cover and cook for 15-20 minutes.

-Rinse and chop green onion, tomato, cilantro, and avocado and set aside.

-Heat a skillet to medium-high and add 2-3 TBSP of avocado oil.  When pan is hot, add in the pound of ground beef, chopping with a spatula.  You can add any spices you want at this point (sea salt, pepper, cayenne, chili powder, or paprika).

-Remove from heat after the meat is browned, and drain any excess juice.

-Set up a bowl with brown rice, top with the ground beef, then the veggies on top.  Feel free to add some hot sauce to spice things up!
