Lentil Carrot Zucchini Soup

High in fiber, protein, vitamins, and minerals, lentils are a great addition to soups.  Here’s a great pairing with carrot and zucchini for a filling and tasty meal.  Enjoy!

Chop:

-2 cloves of Garlic

-1 small Onion 

-2-3 Carrots

-2-3 stalks of Celery

-1 medium green Zucchini

Bring a pot to medium-high heat and cover the bottom with Avocado Oil.  

Sear and stir the carrots, onion, and garlic first for a 1-2 minutes.  Then add the celery and zucchini, stir in and allow to cook for 1-2 minutes.  When this mixture is looking good, add 2-3 cups of water and bring to a boil.  

Rinse:

-1/2 cup of green lentils (or whatever ones you choose)

Add the lentils to the pot and stir in.  Allow to boil for a minute then lower the heat.

Add in:

-Pinch or two of salt

-Few shakes of pepper

-tsp of Paprika

-tsp of Cumin

Cover and cook on low for 20-30 minutes.  Allow to cool for a few minutes then transfer to your blender to liquify.  Check if seasoning if to your liking and add more of whatever you want (I always find this one needs more salt!).  Enjoy!
