Salmon Hash

Two wonderful worlds colliding!  Everyone loves salmon, and who doesn’t love a good hash?  Here’s an easy and tasty way to spice up your traditional ways of cooking salmon:

 

In Large Skillet:

-Cook one package of bacon

-Remove cooked bacon from heat and save a few tablespoons of grease to cook in

Chop and Add to Skillet:

-One large purple sweet potato (purple skin, white on inside) into small chunks

-One scallion

-2-3 cloves of garlic

-Cook over medium-high heat until the potatoes are brown

-Push the potatoes to the sides of the pan and place the salmon in the middle of the skillet.  Cook for a minute on each side before chopping into smaller pieces with a spatula

-Mix the salmon and potatoes altogether

At this point add in:

-Tablespoon of chopped fresh parsley

-Teaspoon of dried dill weed (or fresh dill if you have)

-Tablespoon of fresh lemon juice

-Tablespoon of sea salt

 

Mix together, make sure the salmon is cooked to a medium, remove from heat and enjoy!

Bonus Add: Feel free to add some crumbled bacon at the end

Bonus Tip: This is a great recipe to do with leftover salmon as well.
