Simple Salad and Eggs

This is one of those meals you can eat at any time of the day.  Master whipping this one up for breakfast, lunch, or dinner.  Healthy fats, protein, and a few servings of veggies.  Off you go!

When making a quick salad for a meal like this, your measurements don’t have to be exact.  If you’re eating by yourself use one scoop of salad greens (or more with a friend!).

Simple Salad:

In a bowl mix the following:

-Chopped greens (your choice!)

-One chopped scallion

-Chopped small apple

-One scoop of pickled veggies (your choice…this was a beet/kale mix)

Simple Dressing (right on the salad in the bowl)

-Two shakes of olive oil

-One shake of apple cider vinegar

-Squeeze of fresh lemon

-Shake of sea salt

 

Pair with sliced Avocado on the plate.

 

For Eggs:

-Heat pan to medium-high heat

-2 shakes of avocado oil in the pan (it’s a high heat index)

-Crack two eggs and cook to any style you want

 

This meal should become a staple for anyone looking for quick and healthy!  Enjoy!
