Ingredients:

-2-3 cups of spinach

-3-4 stalks of celery

-1/3 of a sweet onion

-1 green apple

-1 cup of parsley

-1-2 cloves of garlic

-Small chunk of ginger (optional)

-One can of light coconut milk

Rinse all veggies, peel the onion/garlic/ginger, and chop into chunks.

Heat a pot on the stove to medium-high heat and add 3 TBSP of avocado oil.

Add in the onion, celery, garlic, and ginger first and stir for a minute or two.  Follow up with the apple, give it a quick stir.  Add the parsley and spinach last, adding more oil if you need to.

Let the whole mix get wilted (a minute or two), then add about two cups of water or until the mix is covered in the pan.  Add a few shakes of salt and pepper.  Bring to a boil, then drop the heat to low and cover.  Let cook for 10 minutes.

Remove from the heat and add the can of coconut milk.  Wait for 10 minutes or so then add the whole mix to your blender (Vitamix, Blendtech, or Ninja).  Blend it to a soup and enjoy!
